Happy Thanksgiving y’all and cheers to this unconventional holiday season we see ourselves having in 2020! I hope y’all are safe and healthy, but most importantly, staying in touch with your loved ones.
This time of year, I always try testing out new recipes, specifically the baking kind, and this year I found a super easy/delicious Dutch Apple pie recipe. In true “T” fashion, I switched it up for those of us who like the non-dairy/gluten free options. So let’s get to it!

Ingredients:
• 1 homemade pie crusts or 1 ready-made pie crust (gluten free) Trader Joe’s has a delicious gluten free option for crusts.
• 5 1/2 apples peeled, cored, and sliced
• 1 tablespoon lemon juice
• 1/2 cup granulated coconut sugar
• 1/4 cup light brown sugar, packed
• 3 tablespoons white rice flour
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon nutmeg
Topping Ingredients:
• 3/4 cup white rice flour
• 1/4 cup granulated coconut sugar
• 1/4 cup light brown sugar, packed
• 1/3 cup vegan butter room temperature
Baking Directions:
1. Preheat oven to 375°F.
2. Fit pie crust into the pie plate.
3. In a large bowl, mix sliced apples, lemon juice, both sugars, flour, cinnamon, and nutmeg. Pile into crust.
4. Prepare to top: In a medium bowl, with a pastry blender or a fork, mix flour, both sugars, and butter until coarsely crumbled. Sprinkle evenly over apples.
5. Bake at 375°F for 50 minutes. (If your crust gets too brown early on, cover the edges of the pie crust with tin foil and continue baking). I added 5 extra minutes to the bake time, but it truly depends on the heat of your oven so start looking at the pie around 45 minutes.
And that’s it! That simple y’all! For anyone who can’t switch out the sugars, flour, or butter for gluten/vegan options that’s totally fine! Use what you have and enjoy y’all!
