Sweet Vegans Delight

Alright y’all, it’s been a minute. The past two months I have been exploring more fitness, working on my running game, but most importantly, understanding the human body and what healthy foods are necessary for us to be on our “A” game. Have I failed, absolutely, but I haven’t given up and I’ve learned that those late-night Wendy’s Frostie cravings will do a girl more harm than good, especially when you’ve given up dairy for a while. With all that said, I am back and better than ever to serve you all some sweet, savory, and vegan treats!

Now the picture just does not do it justice, but I am telling you once you hear how to make this sweet fruit medley, your taste buds will be asking for more.

Here’s what you will need:

  • 2  tbsp vegan butter (I use Smart Choice)
  • 4- 5 medium-sized red-skinned apples
  • 2  large white peaches
  • 2  tbsp coconut sugar
  • 3  tbsp cinnamon

In a small/medium saucepan set on medium heat and you’ll put in two tbsp’s of vegan butter and add the chopped 4-5 medium-sized red-skinned apples and the 2 chopped up white peaches. Now I leave the skin on, but you can certainly take the skin off as well, I just like a little more bite to the fruit. Once the butter has melted and the apples and peaches have softened ever so slightly for 2-5 minutes, you’ll add the 2 tbsp of coconut sugar and the 3 tbsp of cinnamon into the pan. From there, just stir up the apples and peaches and the sugar will caramelize, leaving the fruit with a nice cinnamon flavor.

To top off this warm and yummy treat, I put on the coconut whip cream to give it that evening dessert finish. You certainly don’t have to, but if you’re anything like me and my sweet tooth, you add that cream!

Now if you’re not into the vegan thing, I totally get it. This recipe only takes about 15 minutes to do, give or take, and you can add whatever sugar you want, you can even put a splash of cream in there and top it off with dairy whip cream, the possibilities are endless! Most importantly, both recipes are made for moderation, plus you’re getting your fruits in so it’s a win-win!
