Y’all, I am all about the quick and easy dinners! Even during quarantine, time is everything to me, so an easy one pan lil number for dinner is all I need to do my happy dance in the kitchen.
I go between eating a more vegan diet to fish and if you’re a lover of fresh white fish, cod is the go-to fish. It’s filling and packed with protein, you really can’t go wrong, and who doesn’t love a good Boomerang featuring healthy foods like above?! Feel free to pair it with your fav green veggie, mine is asparagus.
First, preheat your oven for 425 degrees Fahrenheit. As the oven heats up, you’re going to cut the ends off of a fresh stock of asparagus, drizzle about 2-3 tbsps of your favorite olive oil over not just the asparagus, but also the fish. Remember, one pan, one prep, so we prep it all together!
Once you’ve got your olive oil on, sprinkle sea salt over the asparagus and cod. Then for the asparagus ONLY, sprinkle over Everything But The Bagel.
For the cod, throw on a dash of pepper, a tsp of onion salt, a tsp of garlic salt, and a tsp of paprika. Just like that, you’re done! Pop it in the oven for 15 minutes and enjoy! Y’all won’t regret it!
