Cinnamon Banana Bread

There’s nothing better than a simple banana bread. It reminds me of when I was little and my mother would make my grandmother’s famous banana bread. I’ve never been a fan of walnuts, but if you do enjoy walnuts in your bread, it’s a simple add for the recipe. My special take on it is adding cinnamon and finishing it with a cinnamon sugar glaze on top. Yes, that’s right, a sugar glaze for that extra sweetness.

One day I opened my pantry and noticed I only had all purpose flour, sugar, cinnamon, baking soda, oil, two bananas, eggs, vanilla, and butter. I’ve been on a big baking kick, thanks to the Great British Bake Off, so I felt like a challenge to see what I could make and banana bread came to mind. Now if you aren’t into the extra sweetness of a glaze, no problem! Take out the glaze and let the bread speak for itself. It’s a super easy recipe to follow.

Once you get the measurements for all of the ingredients, in one big mixing bowl, mix together the wet and dry ingredients together until you get a cake-like-batter. You can make little muffins, but I prefer a loaf to let the glaze soak in once baked. I baked mine for 26 minutes, but depending on your oven, air on the side of caution and start out with 21 minutes. You don’t want to burn the edges of the bread, so make sure you stick a toothpick in the middle to see if you pull out any raw dough. If you do, put it back in the oven for another minute or two.

All of the ingredients are budget friendly and you’ll have plenty for leftovers as well. It’s great for breakfast with a cup of coffee or a sweet treat after dinner. You won’t regret making this yummy banana bread!
